_ Gluten-free foods are often considered 'tasteless', but
this isn't a fair assumption; many gluten-free foods are delicious.
And these yummy chocolate chip bars will prove the point – they're
both gluten free and vegan, and_ they're very delicious. Try them
out, whether or not you're restricted from gluten.
!! Ingredients !!
* 2 cups Bob's Red Mill all-purpose gluten-free baking flour or
other gluten-free baking flour
* 1/2 teaspoon xanthan gum
* 1/2 teaspoon sea salt
* 2 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1 1/2 cups light brown sugar
* 1/2 cup canola oil
* 1 1/2 tbsp vanilla extract
* 2 tablespoons agave nectar
* 9 tablespoons brewed coffee (or you can use rice, almond or soy
milk)
* 1 tablespoon ground flaxseed meal
* 1 1/2 cups semi-sweet chocolate chips
!! Steps !!
* Preheat the oven [1] to 350°F/180ºC.
Xanthan gum is a very important part in gluten-free baking as it acts
as a thickener. In a large bowl, whisk together the baking flour,
xanthan gum, salt, baking powder and the baking soda. [2]
Add the flax meal, and whisk until combined. The flaxseed works in
place of an egg; it helps to bind and it adds fiber.
Stir in the brown sugar [3] and whisk until combined.
Add the oil, vanilla [4], agave syrup, and coffee.
Mix together using a spatula if you find the whisk is not cutting
through the dough.
If the dough [5] is way too stiff and you need it to be a bit
thinner or smoother, add another tablespoon at a time of coffee to
soften. Do this until it forms a pretty thick cookie dough.
Stir in the chocolate chips.
* Make sure to leave a little batter for 'the kids!'
Scrape the batter into the greased baking pan.
Spread batter [6] evenly into prepared pan.
Bake [7] in the center of preheated oven for 35 to 40 minutes, or
until the center is almost firm to the touch and just leaves a
little dent in the top.
When you press on them, they'll feel a little soft but you'll be
able to see that it looks done. If you test it with a toothpick or
knife, it will appear a little gooey, but that's fine.
Let the bars cool completely in pan before cutting into squares or
bars. They're now ready to serve.
