During the autumn pumpkin season, using up
pumpkin puree becomes a traditional activity. But
it doesn't always have to go into a pie –
pumpkin truffles are a delicious alternative sure
to win over everyone's taste buds. Here's how to
make them.
!! Ingredients !!
* 1 cup pumpkin puree
* 1/4 cup brown sugar
* 1 teaspoon cinnamon, ground
* 1 teaspoon ginger, ground
* 1/4 teaspoon cloves, ground
* 2 cups cream
* 1 pound / 0.5kg dark chocolate, finely chopped
* 1 ounce / 28g butter, room temperature
* 1/4 cup orange-flavored liqueur, optional (for example, Grand
Marnier, Cointreau); or pulp-free orange juice
* 6 ounces / 170g dark chocolate suitable for covering truffles
* 3 ounces / 85g cocoa powder
!! Steps !!
Place the pureed pumpkin, brown sugar, and
spices into the saucepan.
* Cook for 5 to 6 minutes. Stir occasionally. The cooking is done
when the mixture has reduced and the pumpkin is dry. Remove from
the heat and leave to stand.
* In another saucepan, pour in the cream. Bring
the cream to a boil, then remove immediately.
Pour the hot cream into the bowl. Add the
chocolate and let it melt in untouched for a
minute. Then, stir gradually from the center of
the bowl to the outer edge. Once mixed well,
add the pumpkin mixture made earlier and gently
stir through.
* Add the butter and mix in. Pour in the liqueur or juice and mix
through.
* Place the bowl of truffle mixture, covered,
into the refrigerator for at least an hour to chill.
Create the truffles. Line a cookie sheet with
parchment paper. Using a melon baller, form
small balls from the pumpkin truffle mixture
and arrange the balls in rows on the lined
cookie sheet.
* Return to the refrigerator to chill for another hour.
* Melt chocolate using a double boiler. Take
the truffle balls out of the refrigerator and dip each ball in the
melted chocolate. Use a chocolate/candy dipping tool to make this
easier. Ensure that each ball is completely coated in chocolate.
* Vary the toppings if wishedRoll covered balls in cocoa. The
pumpkin truffles are now ready to serve or box for gift giving.
