How to Make Wassail

Wassail, although a recipe with English origins, is old
Norse for "be in good health".[1] In the middle ages,
wassail was a common Christmastime drink and for many, the
term suggests warmth, family gathering, and Christmas cheer.
Today, this spiced cider drink is made worldwide and for
this reason, there are many variations of the recipe, both
with alcohol and without. Try the various recipes suggested
here, and feel free to experiment with various other juice,
alcoholic, and spice add-ins. This warm drink is sure to be
a hit on a cold evening; as well, this warm punch will fill
your home with its spicy fragrance.

!! Ingredients !!

Version 1 (Pineapple):

* 2 quarts / 1.90 litres apple cider

* 1 cup packed brown sugar

* 4 cinnamon sticks

* 24 whole cloves

* 4 cups orange juice concentrate

* 2 cups pineapple juice

* 1 cup rum (optional)

Cook Time: 35 minutes
Serves: About 18 people

Version 2 (Mostly apple):

* One gallon / 3.75 litres apple cider

* One can frozen orange juice concentrate

* 6 cinnamon sticks

* 1 teaspoon whole allspice

* 1/2 teaspoon whole cloves

* 1/4 cup brown sugar, optional

Version 3 (Tea):

* 4 sticks cinnamon

* 2 tbsp whole cloves

* 2 tbsp ginger

* 750 g / 1.65 lb sugar

* 1 litre / 33.81 fl oz strong tea

* 340 g / 12 oz frozen orange juice

* 170 g / 6 oz frozen lemon juice

* 2 1⁄3 litres / 78.8 fl oz apple cider

* Peach brandy (optional)

!! Steps !!

!! Version 1 (pineapple) !!

* Add everything besides the orange and pineapple juice to a deep
saucepan.

* Bring to a boil over medium heat. After it begins to boil, reduce
the heat to low and let simmer for five minutes.

* Add the other juices, and continue heating over low until the
juice is heated evenly. Do *not* bring to a boil.

* Strain the liquid through a cheesecloth into a crockpot and stir.

* Turn off the appliance if you plan to add the rum. Slowly stir it
into the crockpot, and allow the drink to set for about ten
minutes.

* Serve and enjoy!

!! Version 2 (mostly Apple) !!

* Warm the apple cider in a stock pot.

* Add the frozen orange juice concentrate.

* Wrap the whole allspice and whole cloves in a cheesecloth or a tea
ball.

* Add this spice packet to pot along with the cinnamon sticks.

* Simmer for one hour.

* Remove the spice sack and the cinnamon sticks.

* Add a 1/4 cup of brown sugar, if desired, for more sweetness.

* Serve warm, garnished with orange slices or cherries.

!! Version 3 (tea) !!

* Prepare the spice bag. Contain all the spices in a cloth bag. Tie
the bag with a kitchen string to secure it. Set the spice bag
aside.

* Make the spice liquid. Pour about 6 cups of water in a tall
stockpot. Stir in the sugar. Toss in the prepared spice bag. Place
the stockpot over high heat. Bring the mixture to a boil. Remove
the pot from the heat after 2-3 minutes of boiling the mixture.
Set the spice liquid aside and allow it to stand overnight.

* Add the other ingredients. Stir in the tea, orange juice, lemon
juice, and apple cider to the spice liquid. Pour ten 6-ounce /
177ml cans of water into the mixture. Lightly stir before placing
the pot over medium heat. Allow the wassail to gently simmer until
it is heated through.

* Serve the wassail.

* Serve the wassail hot. If desired, pour a jigger of
peach brandy to each cup before pouring the hot wassail.

!! Tips !!

* Once the punch is ready, you can keep it warm for serving using a
crock pot.

* Wassail can also be made using whole apples cooked in the wassail
liquid.

* As with any hot liquids, take the usual precautions against
burning yourself, and keep children and pets away from the heat
preparation areas.
