How to Make Cottage Cheese

There are many ways to make the simple dish of cottage
cheese more gourmet, appealing, and flavorsome. It's also
very handy to know how to make cottage cheese at home.

!! Ingredients !!

* 1 gallon (3.78 liters) pasteurized skim milk

* ¾ cup (177 milliliters) white vinegar

* ½ teaspoon salt

* ½ cup (118 milliliters) half and half or heavy cream

!! Steps !!

Pour the pasteurized skim milk [1] into the saucepan.

* Slowly heat the milk to 120°F (48.89°C). Use the thermometer [2]
to guide you. Do not boil.

* Remove from the heat and slowly pour in the vinegar [3]. Stir
slowly for 2 minutes.

Let the mixture sit at room temperature for 30 minutes. Line a
colander with a tea towel. Pour the mixture into the towel-lined
colander.

* Allow the mixture to sit in the lined colander and drain for 10
minutes.

* Gather the corners of the tea towel together and rinse under cold
water for at least 5 minutes. Knead [4] gently, until the curd is
fully cooled.

* Squeeze the curd as dry as possible. Put it into a mixing bowl and
mix with salt [5]. Break up the curds into bite-size bits as you
mix.

Stir in half and half or heavy cream. It is now ready to serve.

* Using measuring cups will help to ensure accuracy.

* All vinegars are not the same. Don't swap one for another. Flavors
will be thrown off.

* Half and half cream tends to have a butterfat content of around
12.5 percent.[1] [6]

* Lemon juice can be substituted for the vinegar of preferred.[2]
